Hi;
It is actually pretty easy to learn latex. or you can use tools like
lyx, klyx to make your job easier. google has answers to every
problem that you may face with latex.
you would definitely need xfig along with latex as you may need to
create drawings and export it as an eps file which can then be used
in side latex.

PS: after having used some serious latex for the past two years, once
you see the output you can produce with it, you would trash any other
documentation system (that includes openoffice)
