You can try amarok / rhythmbox if you want a full featured audio library management software.
Or if you prefer lightweight software, mpd + any mpd client would suffice ( I recommend sonata or ncmpc ).

For video, vlc or mplayer would play any format you can think of.
mencoder is a powerful command line conversion utility.
If the manpage of mencoder is too overwhelming for you, there are gui options available.
