There are many commercial plugins available to achieve this, majority of
which  are for windows, and ofcourse they come with pricetags attached
to them.

One simple way I would sugest, and which I have used, is to use audacity
 to record the skype conversations. The results have not been greatest,
but it can get you working. You might want to do some tweaking to get
better results. Install audacity, start skype calls, and start push the
record button, thats all to it to get started with recording calls.
